Vegetarian chili - A hearty and healthy recipe that can be made in a crockpot for convenience.


 Ingredients:
  • 2 cans of black beans, drained and rinsed
  • 2 cans of diced tomatoes
  • 1 cup of frozen corn
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 1 cup of water or vegetable broth
  • Toppings: shredded cheese, sour cream, chopped green onions, cilantro

Directions:

  1. Add the black beans, diced tomatoes, corn, onion, garlic, and red bell pepper to the crockpot.
  2. In a small bowl, mix together the chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Add to the crockpot and stir to combine.
  3. Pour in the water or vegetable broth, and stir to combine.
  4. Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours.
