  Ingredients: 2 cans of black beans, drained and rinsed 2 cans of diced tomatoes 1 cup of frozen corn 1 onion, diced 2 cloves of garlic, minced 1 red bell pepper, diced 2 tablespoons chili powder 1 teaspoon cumin 1/2 teaspoon smoked paprika 1/4 teaspoon cayenne pepper (optional) Salt and pepper, to taste 1 cup of water or vegetable broth Toppings: shredded cheese, sour cream, chopped green onions, cilantro Directions: Add the black beans, diced tomatoes, corn, onion, garlic, and red bell pepper to the crockpot. In a small bowl, mix together the chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Add to the crockpot and stir to combine.   Ingredients: 8 oz. elbow macaroni 4 tbsp butter 4 tbsp flour 2 cups milk 2 cups shredded cheddar cheese Salt and pepper, to taste Optional toppings: breadcrumbs, chopped parsley Directions: Cook macaroni according to package instructions and set aside. In a separate saucepan, melt butter over medium heat. Once melted, add flour and stir constantly for 1-2 minutes to create a roux. Slowly pour in milk while continuing to stir. Bring mixture to a simmer and cook for 2-3 minutes or until thickened. Remove saucepan from heat and stir in shredded cheese until fully melted and combined. Season with salt and pepper to taste. Add cooked macaroni to cheese sauce and mix until evenly coated. Optional: top with breadcrumbs and chopped parsley before serving. Enjoy!

  Ingredients: 1 lb pizza dough 1/2 cup tomato sauce 1 cup shredded mozzarella cheese 1/4 cup grated Parmesan cheese 2 cloves of garlic, minced 1 tbsp olive oil 1 tsp dried oregano Salt and pepper, to taste Toppings of your choice (such as pepperoni, mushrooms, onions, bell peppers, etc.) Directions: Preheat your oven to 425 degrees F (220 degrees C). Roll out the pizza dough to your desired thickness and place it on a lightly greased baking sheet or pizza pan. Spread the tomato sauce over the dough, leaving a small border around the edges. Sprinkle mozzarella cheese over the sauce, followed by the Parmesan cheese. Add your toppings of choice. Drizzle the olive oil over the pizza and sprinkle with minced garlic, oregano, salt and pepper. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden brown and the cheese is bubbly. Remove from oven and let it cool for a few minutes before slicing and serving.
